I stayed with my grandparents alot when young. Almost every day.
Normal diner was fried potatoes, okra, and some kinda bean(pintos, limas, or northern beans were common).
Grandma always had cornbread also.
I do not remember having meat often, in fact rarely ever. Salmon patties on occasion.
Bologna was the normal lunch item.
I never ate out until I was up in my teens.

We had a dish my mama called "hobo dinner." Hamburger patties, potatoes, carrots, onions all put in one pan and baked in the oven. Damn good. I'd start talking about hobo dinners at school and other kids just look at me like I was out of my mind. I thought everybody ate hobo dinners and knew what it was. I've eaten many hobo dinners as a kid. My wife thought I was out of my mind the first time I cooked them for her. She'd never seen anything like it. She loved it once she tried it though. Come to think of it, I haven't had one in a while...might just have to have one this weekend. I grew up on the hobo dinners too! Mom made them just wrapped up in aluminum foil, and threw salt and some worchestershire sauce on it for flavor. Heck yeah them things were some kinda good!

Of course I thought everybody called their little buddy a "noonie" too cause that's what my dad told me to call it. Kids at school gave me hell about that too.
I was weirdo who played with his noonie and ate hobo dinners. Whenever it was my Dad's turn to cook cause Momma was working late at the hairdresser shop, Dad would make us all Hobo dinners, except he would make them in individual foil packets. My wife and I still make them today. All the time at the cabin...

I'd say that your Mom was a trooper for coming up with the idea of serving taco's on bread as a substitute. God bless those creative ladies who just took what they had and made something of it. You yelling your discovery out about the tacos was priceless and so innocent. There aren't many of us who cannot look back and see how far we have come. Blessings have certainly overtaken us.
I never ate out growing up either but not because we couldn't, it was just my dad didn't care for it. I remember going to Pizza Hut one time and that was it. My wife grew up like OcToBeRDrEaMiN67 did and her family didn't have a lot. She said her mom would make spaghetti and they would eat on it all week. The spaghetti consisted of spaghetti noodles and ketchup. She said sometimes they ate mayonaisse sandwiches for lunch. Her mom and dad didn't have a lot when her and her brother were growin up but they did the best they could do and both of them are great people.

Reading this I see a lot of folks who may have been "poor" in stuff but were incredibly rich in blessings of strong parents who forged on, did the best they could and apparently raised their young'uns pretty well.
Ain't nothing wrong with spoon burgers, hobo dinner, baloney, beans-onion-cornbread and whatnot. Sounds like some pretty darn good grub. Except for the liver, which if it was like what my mom made was overooked, gray, tough and nasty. Ugh.

I agree. Just so I understand the hobo dinner...you basically just put uncooked hamburger patties in a foil packet with taters, carrots, onion, etc and bake it with a little seasoning? How long and at what temp? I got a hankering to try this.
