300 win would be my choice but either works. I have a Sendero in 300 Weatherby and love it. It is only 8.5 lbs so weight shouldn't be a big problem. I have taken mine on hike in Elk hunts (10 hours to camp) and it carries fine.

You can get heavier bullets with the 300 but a 168gr Berger will kill one deader than Elvis. X2 I have had my browning eclipse in a 300winmag about 4 years now... And haven't lost a deer with it... It doesn't kick much at all the bull barrel and the boss on it takes all the recoil out. And those 168gr Berger do exactly what they are suppose to everytime! It has took 4 deer this year and one bobcat... My 13 year old neighbor killed his first buck with it this year, to tell you how little the recoil is...

I bought a 300 Win. Bar a long time ago when I was younger and use to walk a ton of cutover to jump and kill deer. The 300 was great for that as the marginal shots tended to still anchor the deer to be finished with a quick follow up. I now shoot a 7mm Accumark, as I no longer walk cutover. The 7mm is plenty gun for deer and the occasional elk trip.
I have been shooting 175 gr Hornady spire points for both (deer and elk), but will swap back to 150 grain partitions next year for deer as the new club I am in has some really long power line green fields.
Having owned, shot, and killed a truck load of deer with both I like the 7mm better.

I've never trailed a deer I shot with my Steyr 300WM. Including a 200+ pounder at 441yds and two 120+ pound does at over 350yds. My dad shoots a 7mm and we've trailed several deer. Probably has as much to do with shot placement as anything.
300 wm tends to a be a little more stable bullet at LONG range as well (with the right round). Been shooting 6" groups at 500 yds with a 180gr Accubond. Gotta get the right bullet for your gun though.
I'd go 300. You can kill anything with it and it doesn't ruin deer meat like some people say it does and I don't like trailing deer.

I guess ultimately it depends on the range and desired goal, at 400 yards the 150 grain has 5 inches less drop than the 175 grain load I am using. I was also planning to switch back to the 150 gr for better expansion at extended ranges that and the rifle really likes that round will shoot honest 5/8 groups at 100 yards. I bought 4-5 boxes of the 175gr Hornady badged stuff on clearance at Marks for $25/box which is a steal for 7mm Weatherby. I am now down to 2 boxes so will switch back to 150gr and use the 175 grain for elk hunts every other year.

I'm a .30 cal fanatic, have the .300 win, weatherby, and wsm. So much versatility, you can scale down to 150 grain and shoot screamers, or bulk up to 180 or 200 and throw hammers.
