Didn't want to hi-jack the other topic so started a new one for my question...

What is a good "recipe" for crawfish boil that gives them a good spicy and hot flavor? I like mine to just about burn my lips with the spice that is IN the cooked crawfish - but I can't seem to figure out a good mix to boil them in that get's the results I'd like.

Anyone got a recipe that they are willing to share?

Sack each of lemons, oranges, onions, garlic, celery, 3/4 can of salt, 4 bags of swamp fire per sack of bugs, whole big can of cayenne. Kill the heat as soon as its back to boil and let them soak for 30 minutes.

I like the flavor of the Louisiana brand crab boil best. To get the flavor I use the powder and the liquid together. Put however much you want but just remember the longer it soaks the hotter it will be regardless of how much seasoning you use.

I also like to use the liquid and Chack bay seasoning but it is a little harder to come by up here. Chackbay is a little more spicy.

If this doesn't make it hot enough just sprinkle some of the powder on the crawfish after you lay them out. But if you do this you better wash your hands extra good before you go to the bathroom. laugh

Boil crawfish hard for 8 minutes and kill the flame.

One sack of crawfish
Dozen or so lemons
Small sack of onions
3 or 4 heads of garlic
Head of celery
Couple Oranges
Two packs of mushrooms
2lbs of anadoulie
1lb of cajun conecuh
2 bags of red potatoes
Frozen corn
1 large 4.5lb bag of Louisiana Seasoning
1 small bag of Louisiana seasoning
1 small jar of zatarains crab boil

Get water boiling and add seasoning. Let boil for 20min before putting anything else in. Half and squeeze the lemons next. Then add all your potatoes for a good 10 mins before the vegetables. Once you add the vegetables give them about 5 min hard boil before adding the crawfish. Once it starts to boil OR the crawfish float kill it. Add frozen corn and spray outside of pot with water and let soak 30-45min or longer depending on the taste you are looking for.
