It'd be a haul for you but the aquarium in Tennessee has some a few monsters. They'd be free range in the big tank, so to speak.  Sorry couldn't resist. Any decent size river will hold good size cats. Just remember big baits for big fish if you're targeting big fish.

Id go to any of the bigger rivers around and put some rooster liver on a stout hook with a heavy weight tied about a foot or two above the hook and let it go to the bottom and hang on. You can either do that or throw some jugs out with about 4 or 5 ft of thin nylon rope attached to them (at least 10-15 of them) with the same liver on them and watch them drift down river and wait for them to be jerked under water. Youll have a good time doing that

Head, always leads to some cat action This^^^ makes Sense to me.. When I go bull red fishing , only bait I will use is a fresh mullet head. And we catch studs. I don't know for sure about perdido but I'd assume they're in there. If you can catch a few skipjacks those are like candy for big cats. Either cut big chunks or even a whole skipjack. I've caught some nice cats on a big skipjack head. You think a river cat will eat a skipjack??
