You got to get creative with rabbits. Being a white meat and lean, it is bland. We kill 100+ a year so I’ve got some experience with them.
Hash, stews and the white bean thing is a good one. If I’m going to fry or grill they get 4-6 hours in crock pot on low before hand.
Bbq, rabbit cakes and smoked while after a brine are good choices but a lot of work.
Squirrels once tenderized are just good. Batter and fried and or simmered in gravy.

Its rabbit for me, my Mama could sure fry up some good rabbit, biscuit and gravy. I have never understood why eating rabbit isn't more popular. Mighty fine if you know how to cook it.

I throw the tree rats out. I will do a rabbit sauce piquant though Had some on a rabbit hunt a few years ago at a buddies place. His friend cooked up some rabbit stew he called it but it reminded me of a sauce piquant. It was some count just needed some time ice for it to go over.

Personally not enough meat on squirrels for me. For either, fry like chicken, add dry ranch seasoning or other of your liking, at least salt and pepper. Make brown gravy with biscuits. Not much meat, but really good gravy. For older game we use to give those to an old timer that would use a pressure cooker.I would think fry or brown either like chicken, then add to crockpot, set on pressure cook or slow cook. Could soak in cola soda overnight to help tenderize. A little salt, pepper, onion, and garlic will do wonders to any game.
