A #8 Lem will get job done but #12 would be better and if you’re c going to do cubed meat a game winner from academy is a Westin and can cube meat faster than I can feed it.

Meat brand or LEM #12 or Vevor #22. I have 2 of the Vevor grinders the we use for processing and all our sausage making. Been using them for years. No issues and they are used hard.

I use a LEM #5 and it’s really good. They’re pricey brand new. I lucked up and got a used one at a deal. Even if I had to pay full price it’d be worth it. Factor in how much it cost to drop one off and it’ll pay for itself with 3 deer.

I have a LEM #12 and it does a great job and have been very pleased with it. Will grind a whole deer's worth of meat in about 10 minutes.

Get a 1 HP grinder, hand-crank cuber, vacuum sealer and an older used fridge to quarter it up and cool the meat. When you grind it, it helps if you stick 1-2" chunks in the freezer and get chilled first.

Get a better one, just in case you miss a little gristle, so the blade won't clog up. A good vacuum sealer is worth it too.

I have the lem 22 and it does a good job. I got the bigger size so I could grind bigger chunks of meat. A smaller unit would have been fine though.

For just 2 deer it may be better just to have a local processor do it for you. They may let you watch them grind your deer meat.

I've got a Cabela's Commercial 1hp #22 with the cuber attachment and the mixer attachment. I'm happy with it so far.
