MrsGomer is out of town for the weekend on a women's church retreat, so me and the kids decided to throw something on the grill for dinner. The kids have been craving Rendezvous ribs (especially the daughter who is like a junkie needing a fix, if you couldn't tell by the crazy eyes) but since it's 4hrs away, I decided to give it a try myself. Got 2 slabs, removed the membrane, rubbed with yellow mustard as a binder and coated with Rendezvous Dry Rub (we keep it on hand). Let the rub setting in while the smoker was getting up to temp. Did 2hrs uncovered at 290*, spraying with 50/50 mix of ACV/water at the 1hr and 2hr mark. After 2hrs, wrapped in foil and back on for another hour (so 3hrs total at 290). Pulled them after 3hrs and the internal temp was right at 200. Let them rest about 15 minutes, unwrapped them, gave them one last light dusting of Rendezvous rub and cut. Being my first time doing ribs, I was worried I might overcook them and dry them out, but they came out perfect and really juicy.
