If you think you can use the space down the road I'd recommend doing the 20' height. I had a 40x40 built at work about 10 years ago and it wasn't much more cost since they were building it anywaus. I built a second floor in it over 2/3rds of the floor space with a staircase and it added a ton of usable space. also the height would be awesome for a car lift.

14' walls and 5/12 roof is what I have planned for my 50x80 but half of it will be my house.

Don't skimp on lighting. You can never have enough lighting in a shop.

Put good security doors on it. We get them here at the concrete plant.
Also, put a good dead bolt lock on each door, and don't give your wife a key. My shop is now a storage building.

Also, I'd recommend each plug to be 4 to 4 1/2 ft high. The convenience is great.

I have a 24x32 I just finished. I have 4 sets of 8' h.o. tube lights. They are bright . I also put another one of those lights right over my workbench area. I have 4 outlets in the 8' section where my workbench is. I did spray foam insulation bc my building is for my spray truck and chemicals which obviously cant freeze. With only an electric oil heater it hasnt gotten below 45 inside. If you cut the lights on it will jump to 55-60 in 15-20 minutes. Get OUTSWING doors. Alot harder to kick in/ break in. Get a good insulated garage door otherwise all of that insulation is wasted if it blows thru the garage door. Theyare a money pit bc u will always need/want another something to go in it or to do to it.
Give me bout 15 more minutes, I was dreamin about beavers.......... Si Robertson
