I got a recipe off the big green egg bbqers facebook group and I'm putting it to the test today I will let yall know how it turns out but several people on the group have tried it and they say it's the best chili they have ever had. The recipe is, 2 lbs 80/20 ground beef 1/2 lb bacon 3 different chili seasoning packs 1 can green chile enchilada sauce 1 can rotel (I added an extra can of diced tomatoes because I like more tomatoes in mine 5 cans of whatever beans you like in chili (I used black, light red kidney, and pinto) 3 sweet bell peppers, a red, orange, and yellow 1 red onion (I used a small sweet yellow onion) Dice peppers and onions, add them to pot, open bean cans and drain and put them in pot, add rotel and enchilada sauce to pot. Pour the three chili seasoning packets in a measuring cup and stir. Put half of the chili mix in the pot and you will mix the other half with your meat. Chop the bacon up and mix the half of the chili seasoning you saved, the bacon, and the burger meat and make a huge hamburger patty. Most of the people I saw making it used a big Dutch oven but I had to use a big pot because my Dutch oven wasn't big enough for this recipe. Next you get your egg to 300 deg with the plate setter in with the legs up and set your pot on the plate setter and you put a grill grate of some sort over the top of the pot and you put your huge meat patty on the grill grate above the pot. Rumor has it that you smoke at 300 for about 2 hours until they patty gets to 160 internal temp and you take the patty off and break it up and add it to the pot with the other stuff and simmer at 300 for another 30 or 45 minutes and it's done. By the way, I'm smoking with hickory.

I used a packet of pioneer, chili-o, and the piggly wiggly brand. It doesn't really matter which ones you use. Just get three different ones that you like, or get all three the same brand that you like, I don't guess it really matters.

I've used leftover Boston Butt and Beef Brisket to make chilli with. It's awesome.
