I used to sell a lot of it in mobile. Made more than the fur was worth and easier to process. I would cut off the meat and make jerky sometimes and it didn't taste any different than deer or any other jerky. Not a lot of meat on one except the hams though. Made into barbecue in the crock pot it's not bad either but not my favorite, but I don't really like any meat that way. You have to get the glands out or its awful. The paw on thing is true too. I had a guy a couple years ago that was reselling what I sold him and could sell all I could catch. You could say he was more in with the folks that eat it than I was.
