Wrap in tin foil with onions ,salt and pepper. Cook at 250 for about 4 hours in oven. Pull it off the bone and eat.
This, yes. Just low-and-slow, with some kind of liquid for moisture, until the bone pulls out easily.

Best thing I've found to do is to shoot the deer right through both shoulders and ruin them. Then I don't feel bad about throwing them away.

Cut shoulder off, cut shank off, put shoulder on smoker. That's usually my process if I butcher them myself. I just smoke the entire shoulder. Such an under utilized method. Hard to screw up and turns out great.
