Cooking will kill any worms in the flesh of the fish. Do not over cook it, but don't undercook it either. I do not like the dark line in Amberjack because it tastes so fishy.

Absolute pain in the butt to clean but IMO there is not a better eating fish that swims in the Gulf. We all used to regard them as just trash fish and bait stealers.

use one of those cheap box cutters.. cut out all around the fillet and then you can use your fillet knife to cut the fillet off then cut the hide off.. some people pull the hide off doing it this way but when you pull it off it leaves an ever so slight membrane from the skin on the fillet.. bout the easiest way i know.. i have a video of diving years ago and when limits were not an issue with triggers and absolutely laid the wood to them and good ones too.. . they the dumbest or most curious fish in the gulf of mexico..

It's like that in any large saltwater fish, aj's, cobia, snapper, grouper, big redfish, mackerel. Always cut the bloodline out before cooking. As far as the worms go, if you look hard enough, most all saltwater fish have them. You'll find them in tidal bass, specks, small reds, etc. especially in the warm water months. Just a naturally occurring thing. AJ's do get them bad. Just remove what is obvious when you fillet it and cook it up.

Here's another trick an old fishhead showed me for triggers. Take the point of your knife and go straight in through the poop hole in the underbelly of a trigger and run it straight out through the top of the fish at the dorsal. Your knife is now at a 90 degree angle and right up against the back bone. Fillet down the backbone to the tail like you normally would. Whe you reach the tail, dont cut all the way through the tail. Go right up to the edge of cutting the fillet free from the fish, them flip the fillet over, meat side up and start at the tail using your knife to cut the skin off as you pull the fish toward you. You leave a little meat on the fish but you get 90% of what's good, dont dull your knife up, and you can blow through a pile of them pretty darn quick. I used to hate cleaning triggers til I learned this trick.

Caught this one 30 miles offshore back in 2011 on my former bay boat the "Hell Yeah!" a 22' Pathfinder. I've caught plenty of them before and since, but I was determined to catch a wahoo on my bay boat and after a couple of tries, we finally did.

Leroy dayum that is a stud wahoo!!!! I caught a weehoo, only weighed about 35 pounds. I bet that fish was beautiful went he lit up. Those colors are mind blowing.

When I went to Hawaii I wanted to fish. Had a trip lined up but only catch was they kept all fish. They sale them to fish house.

AJ is pretty darn good, but nothing like cobia. I grew up south of Miami eating amberjack. The trick was always cutting out the blood red streaks and chunks of meat as that was mostly blood and not very tasty. AJ is good eating and even better at fighting!

Wahoo, Cobia and AJs are my top 3 saltwater fish to eat.

If you have never fished for AJ then y’all need to do it at least once. Ripping a 3oz butterfly jig on structure and having a 30lb AJ hit it going the other way is a trip. Two though is ALL I want. They will flat wear your butt out.

We fish offshore on a regular basis and have eaten about everything out there. Lionfish is even very good. Nothing better than trigger fish cheeks!!
