I have only had one sow that I have kept that was strong tasteing/smelling and it wasn’t very big. The only hogs that I have had trouble eating/cooking other than that one was all boars.

My personal opinion is that the best eating hog is a big Barr hog but you don’t run across many of them anymore.

I eat the small ones (under 30 lbs.). If I am going to smoke some, I will keep a sow. Other than that, they are given to someone hungrier than I am. LOL

I aint killed them like some of yall but i hunt public land and have shot about a dozen now. Every single one of mine tasted great and all tasted the exact same. None ever smelled bad either. I had one hog that tasted like crap. It was a 15 pound hog. They all have that wild taste but this thing tasted like pure acorns. I can deal with the acorn taste a little but this joker was strong. I smoke all mine for about 10 hours. This thing was bad tasting. Now i did shoot him when his adrenaline was pumping. The others i shot when they were calm.

All mine have been infested with ticks. All mine have weighed 100 to 225 pounds. Except that little feller.

Had a guy I used to work with ran and caught them with dogs.
He would bring some to work for us all to eat. They all tasted
kinda funky to me.

Are you sure you got your meat back? If it was from a processor then its a good possibility someone wasn't very happy with the sausage they received out of that batch. LOL

That's because they were ran and caught. It's the same way with a deer that was ran with a dog and shot. Too much blood and adrenaline pumping. I have killed and eaten boars in the 200 lb range and they were fine. But......they were stalked and shot while they didn't have a care in the world and I am very picky about how I handle them when I butcher them.

Yep I'm also very picky. I've seen some guys dress a boar and let piss run all over their damn hams nasty. I've had that happen with deer before, and just hosed it off, but not a hog, i won't touch it...

Yep i was there.

I guess it may have a lot to do with the boars that I kill aren’t very happy about the situation they are in prior to being killed.

Soak them in a big bottle of lemon juice and box of backing soda 3 to 4 days pouring water off every other day. Keeping ice on the meat. .big boar. Big sow. Doesn't matter meet skill be like from grocery store guaranteed

I smoke the hams and shoulders whole. Grill the backstraps and cook the ribs in the oven ( not much meat on them but my grandmother loves them so I keep them for her.)

That’s why we never killed them when dog hunting, always tookem home and putter in a pen to shoot in the head with a 22 when we were ready to eatem.
All that “ can’t eat a boar”nonsense is just that. I’ve smoked a train load of 300-350 pound boar hogs in the last 40 years and one that weighed 398. If it ain’t full of adrenaline when it died it taste no different than a 40 pound sow.
