I don't even really count carbs buddy but you can figure it or change it any way that helps you. I've not tested once or worried too much about eating anything as long as it had no sugar or grain or potatoes in it since last August and have lost a bit over 100 lbs since August.
The thing to take from this for me is a more palatable way to eat kale, which is one of the most nutrient foods on the planet.
I would tell you though that the way you do it seems to be working great for you. All I would caution about is to not get so caught up in all the details that it makes it seem too hard to live with every day.

Once I’ve lost another 10lbs or so, my plan is to transition to eating about like what you are describing. I’m thinking that introducing fruit, juices, certain veggies that are higher carbs, etc back into my diet will make it a lot easier to maintain as a lifestyle. But planning to continue staying away from bread, sweets, and potatoes. May even work the occasional beer back into the mix. That’s been rough on this 100 degree day.

Here's one more thing I need to say about that. I am still trying to lose weight so I am getting more refined as that amount that I need to lose gets smaller. Honestly, I'm at 200 now and I have a skinny buddy that's a good 6 inches shorter and I'm stronger than him and he only weighs 16 lbs more than me now. 20 more pounds should give me a 6 pack. I don't drink fruit juice now at all and only eat fruit and berries once every week or couple weeks and I think it's just easier to not do perfect at all and still lose weight when you are 80 -100 over. The one thing I would tell ya'll though is that I have always weighed every day. I know there will be fluctuations of up to 5 lbs day to day and even within the same day so I don't freak about 5,but I want to keep an eye to make sure I am not in a gaining trend. More weight for more than 3 days than my 4-6 day low and I change my diet. I've fasted an entire day and I've drank nothing but fiber for 2 days just to flush out. I can tell you that it will take about 3 days to get rid of a lot of meat even if you have had a bowel movement several times over that 3 days. I've felt full and only had water and fiber supplement for 2 days and thought I had to be clean until I saw what happened the 3rd day before I even ate. That was way back when I was experimenting more than now. Quitting sugar has more benefits than losing weight. We all thought we were unhealthy because we were fat,but really we were fat because we were unhealthy. You won't lose the fat and feel good until you get healthy and a huge part of that is getting your insulin low. Just study up on what sugar and substances like sugar that trigger insulin do to us. It's not just gaining weight. That's just one symptom.

I'm not really counting carbs, just trying to use a mental notebook to keep up with them. I'm trying to eat less than 30 grams per day. I may be, or may not be. I'll try the shake. I may have one for "supper."
I have a bi-annual doctors appointment coming up in about 5-6 weeks. I'm anxious to get my blood test results. I want to know what my hormone levels are doing. I know my Cortisol level has been high for a decade or longer. I'm also going to get him to check my Leptin level. I didn't know what that was until I started this diet and I'd bet money that most people that are more than 50 lbs overweight are Leptin resistant. That's the hormone that tells your body that you're full. Two months ago I could have eaten a 3000 calorie meal and would have been grabbing a snack 2-3 hours later because I felt hungry. I rarely feel hungry anymore. From what I've read it's supposed to take 6-8 weeks to reverse Leptin resistance and I'd say that's about right for me.
Last summer when it got hot I was working outside and got too hot. My BP spiked and stayed high. I had to get my BP meds increased. Well, this year when it got hot, my BP has spiked again. Not sure if it's from the high fat diet or the heat, but I'm keeping an eye on it. I'm interested to see what my Lipid profile looks like after being on this high fat diet. I hope it's not way out of whack.

Mine runs perfect now and I have quit 2 of my 3 prescriptions that weren't even controlling it very well before. Fur Just keep thinking that what you wan to do it to eat totally healthy. That's why I don't eat low carb or keto. I don't want to think "diet" at all. I want to think "What would help my body the most?" The goal isn't losing weight as fast as possible. I could have had it sucked out if that was the goal. Being fat is just one symptom of our problem. When we get healthy the fat will go. We don't want to be skinny and sick. That's why I gauge more on actual fat gone,like in my clothes sizes and how I feel. The biggest thing studying Keto has done for me is to learn of more healthy vegetable choices.

I can eat like a rabbit for a week and lose 5 pounds. Then relax and eat a damn sausage biscuit, and gain 8 phucking pounds.

Look into the glycemic index for different foods. Lots of things act just like sugar in the body. There's a good chance that you still have lots of hidden sugars in your diet. check this out. https://www.youtube.com/watch?v=gALMXv6KqMo

Clem, from mid February til April 3rd, I lost THREE pounds by cutting back and cutting obvious sugars. Started Keto on 4/4 and the results are posted here. You can lose it as easy as I did, or at least I think you can. I am still convinced there is at least one right way for everybody to eat, you just gotta find that one right way. For me it's ultra low carb and high fat.

4/4 I weighed 311 6/4 I weigh 277 34 lbs in two months I feel better than I remember feeling in decades Still not doing any organized exercise but I am working outside in the evenings until nearly dark every afternoon. I haven't felt like doing that in several years.
I have lost this much weight before and did so by working out with weights and doing cardio but I didn't have the energy that I do now.
I tried Keto ice cream yesterday. It was not good. I'll stick with slices of lemon added to water and a couple slices of refrigerated cantaloupe per day instead.
I haven't checked my blood ketone level in about a week. Last check was 2.2 mmol/L
I have eaten less fat in the past week. I have been more hungry but not craving anything bad, just more. I'm trying to eat only when hungry and still have problems not eating out of boredom but that's becoming a more conscious thought.
