My oldest son and I want to do a few days of hunting. Hike in deep and isolated, camp deep in, hunt, eat like kings if we kill something other than time. Where is the best place? Good cold spell would be nice so we could pack out any meat we don't eat at camp.
Suggestions?
Thoughts on these?:
Skyline WMA/Walls of Jericho? Bankhead/Sipsey Wilderness ? Talladega National Forest?
I've hiked and camped multiple times at Walls of Jericho and in Sipsey Wilderness....never hunted there though.

You need to head North of Alabama of any "cold spell" unless you are on "stand-by" to the latest local weather report in Jan. Maybe try WV the 2nd - 3rd week of Nov in Logan or Mingo counties (southern end) . https://www.mapwv.gov/huntfish/map/?v=hunt Those counties and Boone and Wyoming have been bow-only since the 70's IIRC. You might also get a glimpse at an Elk.

Hiking the Pinhoti Trail from Rebecca Mountain outside of Sylacauga up to Cheaha State Park area might be a good trip. Most of that is in the national Forest.
We might also just go to North Georgia or North Carolina and backpack flyfish mountain streams too.

Talladega has one spot that might be practical like in the Duggar Mountain Wilderness area. Other than that it’s hard to find a really deep spot that is isolated from other access points. I’m talking like 2 miles from the nearest road or so. Bankhead or Skyline would probably be better bets for this type of hunting. If out of state was an option, Nantahala NF in NC would be perfect. I’ve been wanting to try a hunt like this out there but I wont do it without others going along with me due to the rugged terrain. Sounds like an awesome time for you and your son. Ive always wanted to park off HWY 9 and get permission from a land owner and actually hike up and over down into the DWA and hunt/camp.

May give that a try in the next couple of years as a test run before going west to hunt. Figure that would be the closest simulation to packing camp in and out plus packing out game.

I've heard that Duggar Mt. is the largest tract of unroaded wilderness in Alabama. The deer are spread out due to the maturity of the forest, but there are thick spots scattered along the Pinhoti there. I've hiked it several times in winter. I'm thinking it's over 10 miles from trailhead to trailhead. Never hunted it, but I've hunted across the street on Choccolocco. It's something I have wanted to do myself. You can put in on the Pinky Burns trailhead, then climb Duggar. For what its worth , it's not an easy hike to get to the top.

Cherokee National Forest or smoky mountain national park would be my guess. Let me know how hunting in the national park works out for you.
