When doing a long cook say a pork butt, brisket or ribs. How long do you leave it on the smoke setting and what P setting are you using.

I never hardly use the smoke setting. It’s just not quite enough. I run a pork shoulder on 225 for 2hrs per lb on P5 setting if that helps. I haven’t cooked a brisket in a long time. Ribs I’ll do on same setting for 3 hrs or so

Pit Boss Austin XL. What I’ve been doing is running it in the smoke setting at P2 or P3 for 3 to 6 hours depending on it’s brisket or ribs. I then wrap the meat and finish it at 275. Just wondering what everyone else did. I can’t use the P setting unless I’m in smoke setting.

Butts : cook at 250 degrees 1 hour per pound with fat cap up, take off double wrap in heavy foil , put them in a cooler for 2-4 hours . Have no Idee what my P setting is. It's that easy.

I keep my p setting on 4. Like its been said 225 til you get what you want. I got the pot boss classic
