1) BUY GOOD SHRIMP (VERY IMPORTANT)
2) Water to rolling boil
3) Seasoning (I like Zataran’s powder)
4) 1/2 dozen lemons, halved
5) Taters (cut in half of you’d like). Boil 12-18 mins
6) Add Conecuh. Boil ~5 mins
7) Add mushrooms and go inside to get your shrimp
8) Add shrimp. Count to 60 and CUT THE HEAT COMPLETELY. Shrimp don’t need to boil long...they will cook just fine in next steps. Overcooking your shrimp makes it miserable for everyone.
9) Add frozen corn

Stir continuously for 15-20 minutes to get the heat out and seasoning in.

x2 on the Slap Ya Mama. Also, if you want something that really soaks up the flavor, throw a whole head of cauliflower in there. It is really good. Can't go wrong with lemons, whole heads of garlic, mushrooms, corn, shrimp, new red potatoes, and conecuh sausage Lots of other stuff is good too but those are the required ingredients at my house.

Oh, and the cauliflower idea is straight from a cajun friend from deep in Louisiana bayou country.

I do a progressive boil like some of the above. For 10-20# of shrimp I like the following:
6-9 plump lemons halved and squeezed into the pot
4-5 large yellow onions peeled and quartered
One bunch of celery with greens attached rough chopped
I put these in the pot as I’m getting the water going to a boil. After the water has boiled a few minutes I’ll pull my strainer and toss the lemon halves(you should have gotten all the juice and oil from the zest that you need by now and those lemon halves soak up a lot of the seasoning)
Put the strainer back in and add some of the seasoning. If you are doing red potatoes add them now along with garlic heads cut across the head. Potatoes take about 15 minutes of boil time depending on the size
Return to a boil and watch your time. After 5 minutes add sausage and more seasoning then return to boil. Boil 3-4 minutes and then add mushrooms and remainder of seasoning. Return to boil and let it go 7-8 minutes before adding shrimp. When I put my shrimp in I let it just come to the boil. Watch them. As said before, when they are pink they are done but if they are mixed sizes watch the bigger ones. When I’m satisfied I drop 3 or so pounds of ice in the pot to kill the boil. Then let them soak 20 minutes. Next, depending upon the mood of the crowd I’ll dump it and serve or I will place in a cooler to steam for another 20 minutes or so.

For seasoning I prefer Zatarains spicy boil + a dash of liquid boil. A little lemon pepper and about a handful of bay leaves.
A note on shrimp; get good, USA caught shrimp with heads and shells on. That’s where all the flavor is.

Last time my wife bought me 2 gallons of that zataran concentrate boil sauce. I used about a little less than a half gallon. Bout to hot to eat,lol

It seems many overcook shrimp and crawfish. It only takes a few minutes until done. Lobster is similar, if it’s rubbery or tough it was overcooked.

My advice would be to use more seasoning than you think you need since you can pull it whenever it hits the right spice. I add shrimp last and let them cook for 3-5 minutes before shutting it down and adding ice to cool it down enough to stop the cooking and allow it to soak up spice. Drink beer and sample until it hits desired spiciness.

Shrimp boil and crawfish boil are not the same thing even thought they are similar.

I personally like Old Bay, Lemons, and Sausage with shrimp. Throw the shrimp in at the very last minute. When they hit the boiling water, they are done. For Crawfish, I like the Zatarans.
