simple dish with great flavor

lightly fry chicken pieces (i used bone in breasts, skinless). sauté onions and bell peppers. add garlic and cook a bit more. seasonings next - salt, white pepper, curry. tomatoes are then added with parsley and thyme. place chicken in dutch oven or large casserole dish. top chicken with tomato curry sauce and cover with lid or tightly with foil. 45 minutes in 350 degree oven. cook rice and toast almonds. remove chicken to platter and add currants or golden raisins to sauce.

One of my favorite dishes - not sure a lot of people know about this - mom started it one day late in our childhood - awesome - now I talked my wife into making it - still awesome 😀

i never had it growing up but sure am glad i found it. good stuff and not difficult at all to make.
