Fry a little potatoes in oil until browned... Add the meat and veggies of your choice. I added Cajun sausage, bell peppers and onions. Salt and pepper everything. Let cool just a bit, add in cheese on top, I used parmesan, cheddar and swiss, then I poured over several eggs whipped with half and half, before throwing it all in a 350 degree oven for about 20 minutes. And this pops out making the whole kitchen smell like yummy goodness. I served mine with a little Vietnamese Chili Garlic sauce on top...

looks great but did you cook onions and peppers before you added them to the pot. No. I forgot to take a picture of that step. I threw them and the sausage into the skillet after the potatoes browned all at the same time, Let all that get happy together for a few minutes, then turned the skillet off for another few minutes, before adding the eggs and cream. You don't want to put the eggs into a super hot skillet or they will cook too soon. This is a one pan meal. Let the skillet cool for a few minutes and then add all the cheeses on top, then pour in the eggs and cream, then put it all in the oven. I season everything as I put it in. I season the potatoes. I season the veggies. And then after I add the cheese and pour over the eggs and cream I season one more time on top. Then bake everything for about 25 minutes watching, because every oven and toaster oven is different. We happen to have a badass Cuisinart Toaster Oven/Air Fryer that cooks stuff super quick even when you are just on standard "Bake."

sorry one more question, what size skillet do you use? I depends on how many people you are feeding. I used our 8" skillet this morning. One potato and 4 eggs and cream. If you use a bigger skillet, then use 2 potatoes and about 6-8 eggs. For this one, since it was a smaller skilled I only used about a half a small bell pepper and a half a small onion and one short piece of Cajun sausage, but you can use regular sausage or even bacon bits, shopped bacon or even sliced ham chopped, You can put spinach in it too. One of my favorites is potatoes, ham, spinach, swiss cheese and eggs with cream and that's it. It's like a quiche, but without the pie crust and add potatoes instead. It would even be good with shrimp and/or crab in it.

A little Parmesan cheese is awesome in these or an omelet as well. I have also cut up the little smokies hotdogs they are excellent in this or omlettes. My daughters like them so we usually have them on hand.

The Sciracha Chilie Garlic paste is some count ain't it Irish ? Love that stuff. And nice plate as always I love it as a condiment on Conecuh sausage dogs too. And of course we use it when we make stir fry, Poke Bowls, Noodle dishes, etc...

My daughters like them so we usually have them on hand. We even use some parmesean along with cheddar when we do cheese grits. Yes. The Little Smokies are great for all kinds of breakfast dishes. The smaller size means more surface area in the smoker for more flavor punch.
