Let’s go!! 10-4! ~~ Sure, baloney isn't as pure and healthy as wild venison, but it's actually available when you need it, it isn't tough as boot leather to chew, and you know approximately what flavor you're going to get when you bite into it. My in-laws will once or twice a year fix some small pieces of deer steak that are good: tenderized, dipped in buttermilk, battered, and fried. If all deer tasted that good, deer would have a better reputation. I realize that a big part of the problem is our lack of cooking skills. If you're talented in the kitchen, you can get deer to taste good.

We get Boars Head bologna once in awhile. Fry it with onions and ketchup with pepper. But i prefer deer though.

I've had venison cooked 6 ways to Sunday by some of the best around, from the ol boys over at Hot and Hot back in the day to burning a roast at Possum Hollow. Spaghetti, Tacos, Chili, Meatloaf, Sausage, and a plethora of ways I can't even remember.
At its best, it is mediocre.

At its best, it is mediocre. I really think it was, "how was you raised". If you grew up on game meat you have a taste for it. I just ate a big ole plate of souse meat for lunch... to me that's a fine meal. But to someone who grew up in the city.... that's nasty. Parents tell me, "my son will only eat chicken or fake frozen PB&J sandwiches". BS... you think a child who was born on a river boat in Cambodia only eats happy meals? I have seen Indian kids tear up some Indian food that my kids and grandkids would not touch. Because I never exposed them to that type of taste or smell of indian food.

Spoken aloud by my wife last night . . . a woman who was raised in the country in Alabama: "Deer meat really isn't that good. It needs A LOT of help to be halfway good to eat. It's always too tough, and you have to wrap it in bacon and cream cheese and hot peppers and Lord knows what else to get any flavor out of it. Heck, Zeigler's baloney is really better and more useful than deer meat." Wellllll she don't how to get it ready , she ain't cooking it right . All I know to say

I grew up on game meat. Rabbits, squirrel, birds of all different feathers. I've just never found venison to be that great. I'll eat it but I'd much rather have beef or pork. I have eaten foods all over the world, and venison in Alabama is just as mediocre as venison in Italy or Switzerland.

You obviously haven’t done it right if you need all that to make it good. Take a tenderloin/backstrap add enough olive oil to coat and season with favorite seasoning grill to medium rare and you are good to go. We occasionally have a tough one but not often. Yeap she's over cooking it . Hell, youcan over boil deer meat . She ain't soaking it over night or two , three days in salt to get rid of the gamey taste.

I've had Venison cooked by Scott Layseth that was the best meal I've ever eaten. We had it in an Asian type peanut sauce and also in a balsamic reduction. I'm not a huge fan of deer sausage or deer burgers but bacon wrapped back straps cooked medium rare over oak on an open flame is hard to beat.
