Dang it's been a long evening! I'm wore out, Between the HEAT and juggling the smokers and trying to find time to hang out with the locals at the horse show πŸ˜ͺ Did get to drink some cold beers and eat pigtails and a big ol piece of red velvet cake πŸ˜ƒ

Looking good fellers. Signals spotty here but gonna try and post my meat 3 up shortly. Had planned on doing something special with Boudin, Crawfish, and some dough πŸ™‚ But that would be considered and entree, so I'm gonna probably do it Tuesday and just post up in another thread....

Kept purty simple. Done a pork loin, ribs, and Quail i stuffed with Boudin. The loin was rubbed down with a little mustard than coated purty good with Honey Hogs, Ribs was first hit with a light coat of Mustard and then coated with some two step, then hit with some Stubbs Sticky Sweet since i was doing Sauced ribs. And last keeping with the mustard "theme" i coated the Quail then hit with some two step then i stuffed with some smoked Zummo brand Boudin and i hit the Quail periodically with some Stubbs mopping sauce. Used a little bit of Cherry & Some red oak for my wood this go around, and Kingsford Charcoal....On a side note that loin gonna make for some fine sammiches with the creole coleslaw i made 😁
