Final Entry #3: July 4th Supper

Baby Back Ribs and Country Style Ribs smoked in Weber Smokey Mountain Smoker
Homemade from scratch vinegar BBQ sauce and Alabama White Sauce (kicked up with minced garlic and cayenne)
Keto Crockpot cauliflower/cheese/butter/bacon smash "potatoes"
Garden fresh sliced tomatoes and green onions
Red, White & Blue (Strawberries, Whipped Cream, and Blueberries)
Finished with a keto mason jar chocolate ice cream treat

American Flag wreat, Holy Bible, Good whisky on ice and an an American made knife---to bring it home!

Pulled these in the 150 internal temp range put in a pan with apple juice.

Shredded at 205 internal temp added some of the juice back and several shakes of the dry rub.

Glad to see the 4th of July and glad it’s over.
I didn’t get a plate shot but it was pilled with pork, potato’s and Arkansas bean. Topped off with banana pudding or peach cobbler.
There are some fine entries I enjoyed seeing all the fixings. I’ll try to get time to scan through and cast a vote.

Starting from top left are sides, a desert hidden in the mix, & an appetizer.

1) Vinegar slaw because Mayo slaw doesn't go with BBQ
2) Cinnamon Toast Crunch infused vanilla pudding. My twist of traditional banana pudding.
3) Mixed greens with hog jowl
4) Honey bacon cheddar jalapeno corn muffins
5) Smoked & deep fried pork belly bites coated with a Peach jalapeno sweet sauce
6) Mayo based bacon dill potato salad
7) Brown sugar baked beans

Now for the meats
1) Red Hot Links
2) Homemade black pepper smoked sausage
3) Smoked firecracker bologna - I paired it with jalapeno cheese & twas a hit
4) Smoked garlic & herb turkey breast - phenomenally moist & tender...why don't I smoke turkey boobs more often?
5) Beef Ribs - couldn't find the big rack so short ones worked & this may be my new favorite meat choice.
6) Spare ribs - fall off the bone tender cause we're not in competition bbq
7) Pulled Pork - as tender as could be asked for
8) The star of the show...Beef Brisket. I'm finally a believer in using Butcher paper. This was exponentially better than any brisket I've made & the only difference was me using Butcher paper vs foil or no wrap at all.

We had a wonderful weekend celebrating the 4th. We actually had Atoler and his wife and son down on Saturday. We had fried turkey nuggets along with double fried french fries, fried green tomatoes, and homemade ice cream. We did not take any pictures Saturday, but we all ate well. Yesterday I smoked two slabs of spare ribs and they were the best ones I have smoked to date. I used mustard as my binder and then put some Bad Byrons butt rub along with some Meat Church Honey Hog. I smoked them for 3 hours at 225 and then wrapped for 2 hours longer with more rub and some butter in the foil. I then did one more hour unwrapped and applied some dreamland sauce every 20 minutes for the last hour. They were by far the best I have smoked before and I have been smoking on my Kamado Joe for 7+years now. I used apple wood for my smoke.

My 2nd and last entree. We hit the river down below the house with the Wife's family so they done all the cooking down there (which great) i did however get to make the Boudin Crawfish Kingcake I've been wanting to yesterday and Wow i could hurt myself with this fo sho 🤣 The filling is a mixture of cream cheese and half pound of Crawfish tails and 4 Boudin links some (casing removed and pre grilled) some Tony's and few dashes of gator drool. The topping is a Queso cheese dip with little red bellpepper, onion, garlic and some green onions and remaining Crawfish tails. The dough is just some Pillsbury Cresent rolls. I used 3.....

I'm going to go...

1. James (Because the sausage wreath was very creative and he smoked so much stuff, and it all looked good, but the quail put him on top.)
2. Straycat (Because he worked hard on three different entries and they all looked good.)

It was a tough call between them two and both put a lot of effort into trying to win that knife.

3. TDunson (Because he cooked a lot of different stuff and I know how difficult it is to do all that.)

Honorable mentions:

Wew3006 for the creative sides and nice brisket.
Bearbranch for the smoked baloney. I have to try that.
Skullworks for the nice ribs and steaks and for putting this thing on.
AU338MAG for the perfect grill marks on his steak.
Bward85 for the tomato pie

A couple of comments on this contest.

1. Everyone did a great job and it's awesome to see the cooking buffet forum taking off like it is.
2. Kudos to Skullworks for putting this contest on.
3. In contests like these your photography is almost as important as your cooking skills. Presentation and staging your food goes a long way to winning.
4. It makes the judging confusing when you are trying to scroll through the long thread and everyone keeps copying and pasting the same food photos over and over again and then saying "Looks good." So you see the same food 3 or 4 times. I'm guilty of that as well, but we may want to make a rule in the next contest not to do that or maybe even not to comment in the contest thread at all. Just post pictures, describe your food, and no one comment unless they are posting their own food. Just a suggestion to keep the food posting thread clean.

On a personal note, next time I enter one of these, I'm not going to invite anyone over. What was going to just be Mrs. Irish and I and maybe one other couple, turned into a full fledged party with 10 people, smoking cigars, drinkin' out by the fire pit, and carrying on until way past my bedtime. It's job to entertain that many people, cook, stage a plate of food, and take pictures. But it was fun as hell and all our friends left the cabin very happy. And that's the main thing, having fun and eating good food with people you love...
