Share some recipes for me. Got 4 decent spaniards and several pounds of king to cook today. Were gonna try king balls but he had en filleted before i could say something.

I just fry them... I don't think they taste bad myself if they are fresh... it would not be my #1 option at a seafood counter... but I feel like the bad stigma is sort of an overreaction.
the ole wormy Amberjack is a trash fish in my book.

Bake spanish fillets @ 350, skin side down in lemon/butter/herb sauce in a casserole dish for 20-25 mins. Squeeze fresh lemons over it about halfway through for extra kick if you like.
Fry them fresh is good too as Goatkiller says. Good eating.
You gonna pull them pistols, or whistle Dixie?

Lemon Pepper, Garlic, and Butter. Wrap filets in aluminum foil and throw on the grill.

Make dip out of the King or smoke it as already said. Otherwise feed it to your cat. Smoked fish dip. Just google it. I’d do it with both of them.

Mo smoker and limited cooking stuff. I grilled the spanish and some king with whasishere sauce n lemon juice n butter n some seasoning. It was good! Baked some more king...1 group with mayo n butter n seasoniing. The other with italian, butter, whatsishere sauce n seasoning. The tray with the mayo was better. I think the grilled spanish was better than all of it.
The harder I practice, the luckier I get.

I large king head in a crab trap will get you a doz. or so blue crabs and they will give you about a pound of white lump crab meat and 2 doz. claws. Best use for a king.

There is something wrong with y'all........ almost like you've never actually eaten it.
If you soak it in Sprite it removes all the oils and fishy taste but the #1 thing is not trimming away the dark meat. That should be obvious but some folks don't know much about what they are doing.
You can even wrap in bacon and/or do the pepper and cream cheese thing. They sell blackened Kingfish Tacos like they are going out of style South of our Border.
