I just fry them... I don't think they taste bad myself if they are fresh... it would not be my #1 option at a seafood counter... but I feel like the bad stigma is sort of an overreaction.

the ole wormy Amberjack is a trash fish in my book.

Bake spanish fillets @ 350, skin side down in lemon/butter/herb sauce in a casserole dish for 20-25 mins. Squeeze fresh lemons over it about halfway through for extra kick if you like.

Fry them fresh is good too as Goatkiller says. Good eating.

Kings and Spanish are both quite oily and do well on a grill or in a smoker. Can’t stand them fried. Grease on top of oil.
I like to make a smoked dip out of kings. I always grill Spanish fillets. Get a med hot grill going, put down a sheet of aluminum foil and put the fillets on that. Season simply. I like a little Tony’s or lemon pepper. Also a fan of a little salt followed by something like an Italian salad dressing. Let the fillets cook through. Don’t try to flip them. Then pull off and serve.

Lemon Pepper, Garlic, and Butter. Wrap filets in aluminum foil and throw on the grill.

Cut all the red meat out of the king. Season however you wish. Mix a paste with equal parts mayo and Parmesan cheese. Put a thick 1/4 layer on each filet and bake on 350 until almost done. 10-15 minutes. Put the fish on the top rack and broil for a minute or two to form a crust. I’ve eaten king mackerel every way you can cook it and this is by far the best.

If you don’t have a smoker then liquid smoke will work just fine.

Mo smoker and limited cooking stuff. I grilled the spanish and some king with whasishere sauce n lemon juice n butter n some seasoning. It was good! Baked some more king...1 group with mayo n butter n seasoniing. The other with italian, butter, whatsishere sauce n seasoning. The tray with the mayo was better. I think the grilled spanish was better than all of it.

Just put the grill on low next time, use 1 burner if it’s a gas model. Make a bowl out of tin foil and put some wood chips in it. Lay the fillet on a sheet of foil on the cool side. There’s your smoked mackerel.

Next time cut the king into steaks not fillets. I’ve grilled king steaks before and put a little tiger sauce on it. Maybe some eel sauce. It’s not too bad. You don’t have to out the foil down wen you grill the steaks. Flames reaching the steak slightly is the best to me. Slight char on the grilled fish firms it up nice. Hard to beat the dip though.

I large king head in a crab trap will get you a doz. or so blue crabs and they will give you about a pound of white lump crab meat and 2 doz. claws. Best use for a king.

There is something wrong with y'all........ almost like you've never actually eaten it.

If you soak it in Sprite it removes all the oils and fishy taste but the #1 thing is not trimming away the dark meat. That should be obvious but some folks don't know much about what they are doing.

You can even wrap in bacon and/or do the pepper and cream cheese thing. They sell blackened Kingfish Tacos like they are going out of style South of our Border.
