I've never cooked ox tails. Just boiled the neck bones and picked the meat off them. Put back in the pot with with onions, bell pepper, shallots, garlic, salt and pepper. Boiled long enough to make the veggies soft then threw in the rice and simmer till the rice is done.

We boil neck bones for 10 minute and then add them to our Suka sauce and simmer all day them neck bones are some fine eating

My grandmother always made her hash out of them was some more good.
I made a pot of northern beans with the smoked ham bone from Easter was the richest thing I have ate latey, taste like home!
