I bought a mason jar kit to do this. Basically, some fermentation locks and weights to keep the veggies down. Started simple with green beans. Recipe was 1 tbsp of salt to 2 cups of water, garlic, cayenne pepper from the garden and green beans. Supposed to start checking the ferment process after 3-4 days. Let it get to my level of tangyness and crispness, then put the regular top on it and in the fridge to slow/stop the fermentation. Supposedly lasts up to 6 months and has health benefits that pickling doesn't offer. Will advise.


Also got a jar of zucchini going. Used habaneros in them.
