3 1/2 quarts maters peeled an cubed
5 cups onions diced
1 1/2 cups bell peppers diced
1/2 cup sweet peppers diced
1/2 cup white vinegar
1/4 cup salt
1 small can tomato paste
1 large can tomato purée
1/4 cup sugar

Mix all ingredients together an bring to boil for 10 to
15 minutes . Pour into clean jars a seal . Can use cayenne pepper in place of
Sweet pepper if u like it hot . I boil jar lids an put them an rings on right after putting in
Salsa and they will seal without do hot water bath . Roma maters are the best
For salsa but any will do . I grow my own maters peppers an onions .

My recipe is close to brushwackers, but I use more tomatoes and leave out the paste.
I’ll take a pic and post mine up.

Best way to skin tomatoes is dropped them in boiling water for a minute then in ice water and skin will peel off without a knife . I try get all seeds out also .
