If that’s what you’re into, hit the back button now Saw this recipe in a Bama Saltwater video and had to try it (video at the bottom…skip to the 10-min mark for cooking). Turned out great and even wife and kids loved it. I didn’t have any straight-from-the-gulf Sheepshead filets like he did so I made do with some tilapia filets we had in the freezer. Blackened filets pretty heavily. Sauce: melted 3-4 tbsp butter in a skillet and then dumped in an entire red bell pepper, diced. Let that cook for a few minutes until the peppers were getting soft. Dumped in a spoonful of minced garlic. Toss in a little bit of flour to thicken. After it’s had a couple of minutes to simmer with the garlic, started stirring in heavy cream. Basically just play with the cream and a little flour until you have the amount of sauce you want, and consistency you want. Then stirred in a liberal amount of cajun seasoning to taste. Put a healthy pile of pasta on a plate, put a blackened filet on top and then spoon good amount of sauce over the entire thing. Served with an ice cold Coors Light and some Dr John for tuneage.
