Grilling wood duck breasts wrapped in bacon. Used brine mix for 24 hours kosher salt , sugar, garlic and onion powder . Then soy sauce and Worcestershire sauce for another 24 hours. We’ll see how good they are. Been years since tried this recipe on duck or dove breasts. Now I’m getting psyched for FL early wood and teal season.

Plated product. I slightly overcooked it to 175 instead of 170 but not enough to ruin tenderness. Definitely one of the tastiest ducks out there. I’m hoping they will be up in the Panhandle for teal wood duck early season next week

Glad you enjoyed it but you cooked them way too long. I would pull ducks around 130 ish

Yeah I was worried about food borne illness so I cooked them longer. Just got over food poisoning with bloody diarrhea and ended up in ER so I was not taking a chance on 130 and medium rare.

Can’t blame you there, but I’ve eaten a metric ton of wild game med rare and have yet to have an issue.

Wood duck and teal always are a hit on the table. Need to go check a few spots for teal. Woodies are off limits here in AL.

Yeah I can hunt both early season in FL but I know you can only hunt teal early in AL. I sent my friend a picture of my BWT mount so he knows what to look for in his property.

I have sat next to more than one group on public land that burned up the rainbow teal. Most of those guys get a few tickets and decide duck hunting is not for them. Teal is my favorite duck to hunt. The hunt is over quick or the teal just are not there.

Anytime I've wrapped duck in bacon the duck is over done before the bacon is done. I'm with sw1002... rare is the only way I'll eat it. Same thing with blackstrap.

Everyone is different though. If it was good eating to you, that's all that matters!

I agree with you both on the medium rare. Medium rare how I cook my venison tenderloin too. It was good though and I was cautious after bout with food poisoning recently. Also I started the bacon in the microwave hoping to avoid flare ups. It helped some but I also screwed up watching the temperature too and let it get away some too.
