Haven’t posted in a while, been stupid busy with family stuff. But …… Was in Costco Sun. Picking up a few staples and saw the fish section had swordfish filets. 2 really good size steaks for $28 bucks. Had some down at Destin at a place called Boshamps that was out of this world. So hey I’ll try and cook it. Treated it like steak with coarse salt, pepper, and added a little thyme and rosemary. Got the cast iron hot with some olive oil and cooked about 3 minutes per side. Added a little butter and lemon juice at the end for good measure. Baked potatoes with olive oil and coarse salt hot skin was crispy at 425, fixed a salad and good to go. Just needed a good white wine with it. Forgot that at Costco dang it. Made homemade chimichurri sauce I made yesterday to garnish it with, but it really didn’t need it. Still got the other steak to cook Wed. Nite after gym. And you can bet I’ll have the wine or at the least an ice cold Coors light. Needs a money shot of the white meat.

I don’t eat it often, and a lot of times I don’t get it cooked right, but swordfish done perfectly is awesome! Yours looks great
