Tried something new today. Heard somebody talking about making beauty berry jelly a few weeks ago and since we have a ton of it on our place I decided to give it a go. I hope I canned it correctly (first time canning) but it sure tastes good. Didn’t seal the half jar, gonna let it set up and try it on some toast tomorrow.

It’s really good, haven’t tried it on anything other than licking the spoon when I got done. A little more tart than a grape or blackberry jelly

Never heard anybody making jelly out of French Mulberry. I may have to try that. Nothing else, it’ll be a good conversational side. I have had kudzu jelly before, though.

I’ve had some and love that it tends toward tartness over being too sweet. Beauty berry has a lot of medicinal uses also. Great plant to have a lot of.

Did you check on the proper head space for that. Most jelly/preserves are 1/2 inch and it looks like u have a lot more.

Recipe said 1/2” and I just kind of eyeballed it. I’m probably going to have to pull it out and re boil it to add some more pectin anyway because it’s not wanting to set up

Getting the set right is an art. Lol I have done a lot of jelly/preserves this year and some I got right and some I had to do over. I did just get a candy thermometer to maybe take some of the guesswork out of it.

So im guessing the darker shade of purple means they are ripe?
