Smooth or rough finish?

I got a new one, that was pre-seasoned, and then got after it with a scotch brite pad on an angle grinder and smoothed it out and then seasoned it again. Some of those high dollar ones are smooth.

Smooth but I also think rough is fine for most of what we use it for today. I would say 74% of the time I use mine for frying or if I want to get a nice char on something like onions or mushrooms. But if you really need it smooth for something a non-stick is what I turn too for that application. Not going to cook an egg in my cast iron.

My grandmother has one that she got as a weeding gift and its 70 years old. That thing is like a baby's butt its like glass... crazy smooth.

The reason everyone loves the old Griswold and Wagner cast iron is the smooth finish.

I have probably 40 pieces of vintage cast iron, ranging from Griswold to BSR. My BSR are workhorses and the Griswold and Wagners are more of the Cadillac type. I also have received some of the newer Lodge, and I always burn off the garbage “seasoning” and re-season at least 8 times. Then they are gtg.

I love the old cast iron. I have a bunch of it and cook in it all the time. I like a smooth finish.

Don't matter to me really, got a small one that dates back to civil war era and my Frien said he wouldn't TOUCH IT and just cook on and enjoy it

Do not regret growing older, it's a privilege denied to many!

What ever you do just wipe it clean with a paper towel.

That's cool - if I could go back in time, I'd ask my Dad and uncle for my grandma's cast iron pans. They weren't that old, but probably circa 1930s or earlier if she inherited them. I don't know what became of them - I suspect that my crazy (literally) aunt ended up with them and probably started using them as dog food bowls.

I have a two or three generation hand down cast iron skillet, 12" and the surface is so smooth and shiny you can see yourself. Makes perfect cornbread every time! Use it for many of my recipes, especially making roux. My kids will fight over it when I am gone!

I have a lot of my moms old stuff but my new favorite that I use the most is the chicken fryer I bough (with lid).
6” sides is just high enough to fry fish, shrimp, chicken, cube steak, etc. , and is pretty big diameter.

I have a dutch oven that I bought to fry fish in. I have 3 other pieces, 2 I think my ex wife gave me, one is a big frying pan, one is a small one I cook cornbread in. The one I just got is a 10.5 and I have a flat round griddle one, I have no idea where I got it.

I want to look for some older pans and see what I come up with. Any meat with a bone in it fried in cast iron is the bomb!!

I am still seasoning my new lodge one after smoothing it out. It's got 3 good cycles in it.
