You can get one of those hand crank winches that goes in the receiver hitch or you can weld a bracket on the headache bar and mount a winch to it albeit that is a fairly expensive mod.
I'll tell you another method. Keep you a long 2-3 inch wide tow strap in your Ranger. Drag the deer to a close tree and tie the tow strap to the base of his antlers. Back the Ranger up to him and tilt the bed down, then pull the deer to the edge with his head just over the lowered tailgate. Thread the tow strap around the top bar on the roll cage (headache bar) and then tie it to the tree. Get in the Ranger and pull forward slowly and the strap and tree will load him up for you.
