It's added fat. It's also a marketing scam. People a few years ago made a move to turkey because it was leaner. Thats when the meat companies came up with ground turkey. People see it's turkey and automatically think it's healthier. But common sense would tell you 15% fat in turkey isn't any leaner than 15% fat in beef. But you have to have the fat to hold the ground meat together. To answer your question it's added fat. Idk where they get it from, maybe pork , beef, dogs, man made, who knows, but I do know there's not 15% fat on a turkey
