The name is just to aggravate my wife.

So our Thanksgiving meals started Saturday and per usual I had to smoke two turkeys. I wanted to do something with the left over turkey carcass so made a soup which turned out fantastic. My wife was appalled at the name but enjoyed the soup.

I took the turkey carcass, cut it apart into pieces and placed in a Dutch oven. Covered with chicken broth and put it in the oven for 4 hours. Once tender I stripped the meat and sorted most of the dark out as my girls are picky eaters, so I kept mostly the white meat and no skin. I poured the broth up and placed it in the fridge with the meat until tonight. I sauted a large onion, in a half stick of real butter until translucent. Then combined with the broth. Chopped the turkey and added to the mix. In a separate pot I boiled a bag of multi color rotini until tender. Once soft I drained and combined in the pot with the broth and turkey. To this I added a can of cream of onion and cream of celery, and one pint of half and half and brought it back to a boil. To this I added 4-6oz of pepper jack cheese and blended it in. A little salt and pepper to taste and some chopped diced green onions to the top.

This turned out better than to be expected and made a large pot of soup for like $8 in ingredients added to the turkey. Worth a try and I guess it’s a creamy turkey noodle soup, if the turkey carcass soup name aggravates your family.
