Anyone ever used Monroe Sausage on Hwy 21 in Monroeville? I am thinking about taking them a deer this year, but don't know anything about them....hoping to get some good link sausage and patty sausage. I found them by accident, didn't know they existed until I had to take the detour out of camden to get to monroeville. Any feedback is appreciated.

Deer processing is a side business for the sausage company.

They do mixed batches with whatever deer are there, for larger batches. You will not get only your deer. Except, if you take 60lbs of deboned meat I think they will do a batch solely for your with your deer (call and ask them if this a possibility and I highly recommend you do this if it is an option).

I like their sausage and deer sausage. I did have one poor experience where my deer made it in a batch with someobody’s deer that either seasoned too long in the field or the back of a truck, or had some guts in it. That batch just wasn’t good, had that little leftover gut taste. Otherwise in the 4-5 times I’ve taken a deer there I’ve been happy. Sausage is the only thing I’ve gotten from them because they’re a sausage company.

I had them do a few batches of sausage for me before I took the plunge and started making my own. Not getting my own deer back was the killer for me as well. I found a pellet of buckshot in my sausage. That wasn’t any of my deer and I took the off the bone meat from three up there. Aside from that the sausage was good quality. I hunt right outside Beatrice so they are convenient. But today I’m too cheap, too picky about only getting my deer back, and not at all busy during the season to pay someone to do what I can do myself.

I ate some of it lately and thought it was very good

Just took them one - excited to get it back. Was dang good to me - my buddy let me try his at a wild game cook off - i ate a lot

ive Had their snack sticks. They were pretty good. As for as their link sausage I’ll never ever eat that again. Made me puke in the yard. Way to much fat in it and tore me up.

I use them pretty regularly. Sausage is great. Meat sticks and summer sausage is some the best I’ve had.

Good people to deal with. To this point haven’t had a bad experience with them. Not much choice down that way either though.

I’m not sure if Mrs Deborah still works there. She’s a sweetheart. Her and our neighbor are real good friends. We send her food quite often during the deer season.

I took one last year and it wasn’t the same as it was a few years back. Also thought it was a little steep. I took a quartered deboned buck in. The per pound wasn’t too high but there was a list of fees I didn’t expect.

It’s definitely cheaper to do it yourself if you have the time and equipment. You can get by with low budget equipment or spend a small fortune on it. But it’s a one time purchase. It didn’t take me long to realize I could buy pretty good equipment for what I paid someone to make the sausage for me one time. The biggest thing for me is I know how the meat was handled from the time of the shot until it’s on the dinner table. I can’t put a price on that.

I just got my deer back. I hav had deer processed n diff places in FL - arky and bama. Tried multiple places in clarke - 3-4 in marengo county and multiple in jackson and one in camden

I am sure it cant touch Marsh’s - but from a deer processor that is making deer sausage - this stuff at monroe is great. The meat locker n jackson is simi famous for smoke link deer - but this stuff i just had from monroe is bettr. Had the medium in sheep casing just now - dang good

Bettr than the over 15 plus other places i been to

Best sausage is at souths finest in Pelham. Never tried another one that's even close

That was the issue with me also. The flavor was actually pretty decent but the fat was just way to much. But some people like it like that. Same with a lot of commercial sausages. It’s made with pork trimmings and that’s was the whole intent of sausage. Stuff all the fat trimmings in a casing and cook it instead of tossing it out.

Deer sausage i hav had has been just average anywhere u go and lot is below average!! The place in jackson sells tons of it and it is decent - but this had more sausage like flavor than any i had in clarke / Wilcox / marengo - this is the best this area offers. Cant speak for other areas

My favorite processor is Prasek's in Sealy, TX. The years I have 2 trips, I drop off and pick up, and the years I only have one trip, I have it shipped.

They will let you specify the amount of pork added. I usually do 20% pork, which is what I do if I make it myself. Our ground is 100% deer, no added fat. I cook it in beef tallow.

I also make some bacon burger most years, about 20-25% bacon to deer ground.
