I was taught that it was called “preacher meat.” Because it was the best cut so you saved it for the preacher. Awwww dang you mentioned a Preacher 😆

New member sat the club we’d call them poison glands and remove them so it wouldn’t contaminate the meat. Some would figure it out later.
