Wear disposable gloves (nitrile) and be cautious if you have any cuts on your hands - Brucellosis.
They are OK to eat - I don’t like dealing with them and normally just feed them to the coyotes and buzzards.

80-125# is some fine eating. I can clean a wild hog in less than 10 minutes, get shoulders ham and backstrap and never have to gut it. Agreed. I don't fool with the shoulders though.

Are you processing it? You might want to know more than just processing deer or you better had stayed at a holiday inn express lately. Are they good to eat, yes. Do I prefer it over pen raised, no. Pay attention to what some have said about the good parts and using rubber gloves. My advice, kill every one you can, keep and eat the small shotes.
