Getting new batteries in the cart today (traditional, not lithium). How, specifically, should they be maintained/cared for to get the longest life out of them?

dont leave them discharged for long periods of time. Not only does it decrease battery life. It can cause the charger, not to charge. In which case you need to hook jumper cable to battery pack main terminals and to your vehicle to bypass the charger safety and start the charging process. Then disconnect jumper cables and allow it to charge
Use penetrox or some other deoxidizer on connections.
charge before refilling batteries, and dont overfill. The acid stains underneath means you're doing it wrong

I've been running converted carts on the farm for the last 27 years and never failed to get at least 7 years out of a FLA pack.
