Congrats on the deer. I am really interested in how you cut your deer up. I process my own and have for many years. I debone all mine and am really interested in what you have done. I guess those bone in chops are tederloin and part of a rib? If you get an opportunity I would really appreciate seeing a step by step picture tutorial. I also would love to see that tutorial X3 Thats some good looking butcher work. Congrats on the deer as well!

The other bone in chop is the equivalent to a porterhouse: a cross cut of one side of the backbone with the backstrap (Strip loin) and the tenderloin (Filet mignon) As far as a tutorial goes...I'm flattered that you would ask. I can't promise I'll get to it, because I've got to kill another deer, but it would be fun to document the process. If I'm lucky enough to kill another one, and I can kill it on a morning hunt, I'll try to show you how I do it. I bet once I show how I do it, somebody on here will be able to tell me a much better way, my method is always evolving.

Hunt on very windy days. Do it, and thank me letter. Hunt near thick cover and open areas. Those are the days its time to get serious. Just curious, although i've killed some good bucks on windy days, why do you say these are the times to get serious? I realize they can't hear you walking, but other than that? Looking back through my observations and kills, 20 mph + NW winds following a precipitation event have resulted in FAR more mature buck kills and sightings than all other variables and conditions combined. The colder and more windy the better. If you can barely hang on to the tree you are in then its a good day. What he's saying is you probably need to be in the woods on Wednesday...
