Me and a trapping buddy have discussed this before but never attempted coyote, he has tried fox and claims it's delicious. Bobcat on the other hand is outstanding!! Cooks up white like pork and has about the same flavor as a rabbit! I'll try just about anything, worse case scenario is it will taste like A1 steak sauce or ketchup!
My reason for not trying fox or coyote is based solely on man's best friend, while skinning what we catch I'll always throw a scrap to my buddies dog KOTA a high percentage hybrid and she will inhale everything except a fox and a coyote! I've seen her kill a stray dog, carry it to the barn and chew it's feet and ears off, but if she want eat it I damn sure ain't! !!

I have an old book along the lines of a complete outdoorsman's guide from the 60's that lists nearly every species of game in the continental U.S. and their palatability. If I recall, coyote was not rated highly but described as being somewhat like groundhog in flavor and texture. It described bobcat as strongly reminicient of veal, and I've had bobcat and found that to be an apt description. I've not tried groundhog or coyote.

If I did, I'd take it up to the Chinese buffet to get a good recipe.

I shot a huge bobcat a few years ago while on the Wilcox Academy Hunt and the fellow who skinned out for me asked if I wanted the meat. A fellow Hunter shamed me into trying the backstraps. It was very mild and I'd eat it again. I have the tanned hide in my trophy room and it brings back fond memories.

I had some seared and boiled one time in some Cajun spices. I've paid and got worst tasting food served to me at a Buffalo Wild Wings before.
