I’ve eaten it many, many times. My grandma would cook/bake it pretty often. I never really cared for it, but most of my family loved it. I don’t know exactly how she seasoned it (probably just salt and pepper) - but, she slow cooked it in the oven in an old roasting pan with a lid.
Usually served with mashed potatoes, pinto beans, and pan cornbread.

Tried it and possum at a wild game banquet a few years ago. It was edible... but compared to the possum, it should be considered a delicacy.

When I was a kid my cousin killed one and ask our granny to cook it. She did. Granny was a good cook and could make rice cakes fittin to eat. She baked it in some cajun spices I remember because it dang sure smelled good. Granddaddy got home and wanted to know what smelled so good. Granny told him me and Boo shot a coon and she had cooked it. The look on his face said it all. So he took the baked coon out of the oven and went outside. Sat it on the ground and called up the dogs. The dogs came runnin and when they got to the coon they started sniffin it but none of the three dogs licked it or took a bite. My granddaddy then looked at my granny and said " if the dogs won't eat it I'm damn sure ain't!" He gave it to my uncle to use in crab traps.

I've eaten several. I've barbequed them and also made a hash of them. The meat is really dark. I would say it's edible, but I'm gonna have to be pretty hungry to eat another one. I used to sell the meat from all the coons and possums I trapped back in the 70s. They were easy to sell.
I always thought the meat off a bobcat looked good; it appeared to be a much whiter meat than a coon. Never had the nerve to try it.

Coon meat is greasy but makes a good hash. I've had it cooked with sweet potatoes several times, cooked by several different people and have never cared for it cooked that way. It's also decent grilled.
Possum is not as greasy as coon or as dark. I've only eaten it grilled then deboned and smothered in BBQ sauce.
I sale 50+ coons a year from my trapping. $10 apiece just as fast as I can catch them. Could probably sale 300 if I had time to catch them. Always leave one foot on.
