Much like FSH stated - easier is always better. The most important thing is to dig the holes deep enough that tugging on the hides or lifting deer at an angle from pickup truck bed don't cause the bases to move.

We use a gantry crane I build from pretty light steel. All about 4" square tube. But it was not heavy tube. I got the pieces cut to length at the steel distributor where I purchased the tube. Welded it together. I honestly don't think it cost more than making something "cheaper". It was a couple hundred bucks I think total and has worked well for us for 20 years.
Sink like you use to clean fish with a couple split garden hoses for the water supply.
No government employees were harmed in the making of this mess.

When you mount the winch and run your cable add an extra pully on your beam straight above the winch then out to the pulley that will be straight above the deer. In other words , the cable should make roughly a 90 degree . This keeps the cable from being on an angle and in the way when working on a deer.

25 years ago we cut 4 10" cedars. Set them 16x12' apart. Knotched them for double 2x10's. 2x6 rafters and 2x4 lad. Commercial metal roof. Added a concrete floor, old white ceramic double sink and a stainless cutting board. Also have a frost proof faucet and a cabinet to keep paper towels and such. Installed 2 wenches with metal cables. One and done
