What cut of roast do yall usually cook like this? Looks great , I do the same with a chuck roast but the wife likes hers tender says to tough and stringy. Maybe its the cheap cut at Greers. No good meat markets in my area.

This was cooked on the low setting for a little over 18 hours. Fell to pieces when I stirred it

I've been using a London Broil the last few times I've made beef stew and it falls apart when you try to pick it. I made a pot of stew Thursday night and used a chuck roast (grocery store didn't have any LBs). It wasn't nearly as tender as the LB.

Also, I've been cooking the stew in the insta-pot. The prep time takes longer than it does it actually cook it. Right at an hour in the insta-pot and its ready
