The boat owner is a customer of mine. This was the maiden voyage for this boat. He previously had a 64' Viking that was for sale for a smidge over $2.2 mil.

As of yesterday that was fish number three caught in the GOM and several have been lost. Think the Quota is a tad over 6000lbs this year. This is a whole different game than the TV stuff. These fish are in water over a half mile deep, not a couple hundred feet. You cannot target them, it’s incidental catch only. They also taste like crap and have no market value. Your lucky to get a food bank to take one. What's the reasoning behind the taste being so bad?

Given the excitement, and rarity, of actually getting a bluefin boatside in the gulf, few anglers are going to take the chance of losing it so they’ll bring it aboard as soon as possible. But the build up of lactic acid from the fight can spoil the meat quality. It’s referred to as “burnt”. This is the same phenomenon that some people notice with deer meat where the animal was being actively run by dogs or perhaps aggressively pursuing a doe, or if a cannibal tried to eat you right after you ran a 5K. The commercial guys will swim the tuna, with it hooked to the boat, for a while to let it rest before dispatching it. These are also breeding fish so that may play a small part as well.

But the build up of lactic acid from the fight can spoil the meat quality. It’s referred to as “burnt”. The one we caught on the Intimidator last year was a fortunate opportunity and once in a lifetime for us crew and the guests. We fought it 2 hours before it dove deep, tail wrapped itself, and died on the line. When she went deep we were well on to the braid backing, so about 700-900ft down. We hooked up at around 6:30 and boated it around 12:30 or so. When she came up she was cold to the touch from the deep water and as soon as it was gutted we emptied the ice bin on him (300-400lbs of pellet ice) in a billfish bag and dumped 2 or 3 boxes of rock salt on her. The meat was pretty and she was delicious! 579lbs gutted. https://www.outdooralabama.com/articles/orange-beachs-intimidator-lands-giant-bluefin-tuna That’s me in the middle with the camo slickers Pictures of the meat: https://imgur.com/gIQ2Cue https://imgur.com/hoq3WuXOn mobile and can’t get them to post in the thread
